Tom Kha Gai Soup Recipe

This is by far one of my favorite recipes ever - I add bean thread noodles or rice noodles to make it a whole meal, and sometimes diced chicken or tofu. I found the recipe on another blog...and changed the seasonings to make it a little easier.

Try it! Very comforting!

Ingredients:

2-4 Cans Chicken or Vegetable Broth
1 Can of Coconut Milk ( I really like Whole Foods Organic Light Coconut Milk)
1/2 package of Bean thread noodles ( you may want to break the noodles up a bit otherwise they will be very long :)
Bok Choy ( Sliced into Ribbons)
1 package of mushrooms
1 Lime
1 tsp Garlic Ginger paste ( or to taste)
1 tsp Soy Sauce
Lemongrass ( to taste - Be very careful to only use a little bit if you do otherwise the soup will be very bitter) so this ingredient is optional
Chopped Cilantro ( optional)
Chile pepper flakes ( optional)

Bring Cans of Broth and 1/2 cup of Coconut Milk to Boil, add Garlic Ginger Paste...simmer for about 10-15 min...you can also add the lemongrass here if you like....

Add in another 1/4 cup of coconut milk, bean thread, bok choy, mushrooms, and soy sauce. Cook for about 5 mins to let the bok choy wilt, the mushrooms soften, and noodles to soften. Remove from heat and add the juice from 1 lime, and cilantro, and chile pepper flakes. If you have anyone who doesn't like spicy foods you may definitely want to omit the pepper flakes. The kids love this recipe without it so I see no need to add it when they are around.

When I add the soup to the dishes I use a large serving fork thing for the noodles and I cut them up. If you decide to use the whole package of noodles - it will make it less like a soup obviously. So do as you choose.

Starting today as a Pixie...




So here I am trying to start a blog...I like to babble and ramble on various things such as old movies, vintage/shopping finds that I come across...and the haircut of the month! lol so here goes...



These past few months I've been pondering on getting a pixie cut. It had been a while and I really liked my hair when it was shorter. Last time I kept it dark and grew it out rather quickly. This time I've really been wanting to go platinum even though my hairdresser insists I have dark features. I don't know if I just have A.D.D. with hair or what but I cannot seem to leave it one color for too long. The desire for the perfect blonde has been plaguing me for years. I have done highlights which even overall highlights was a huge change. It wasn't the same. Then I went total bleach blonde but I think I used too warm of a toner...so it seemed to be really hard to maintain. My hubby insists I go to someone. He even tried to get me that as my christmas present I said no, I have to wait until the red washes out. Of course he leaves for a trip and since I'm alone I couldn't be patient and wait! lol Of course not! This isn't the Erica we all know...as my friend Shelley put it best....The Adventurous Erica ......at least I researched! And research I did! I still ended up with yellow hair with orange streaks! But it was rather blonde! So I decided to take another trip to Sally's and this time ask them exactly what to use! The woman was so helpful and so quick to know what to do. So I used a high lift blonde from Ion...a neutral as she said the ash could make my hair go green. Now I think I still may need to go more ash. I am so pleased with my results! I can't wait to go back and ask her how to continue to go platinum!
